Traditional fermented meat products like sucuk and pastırma have been made for centuries. But "traditional" doesn't automatically mean "controlled" or "standardized." In natural fermentation, the process depends on whichever microorganisms happen to be present in the environment — which can lead to batch-to-batch variation, inconsistent aroma, and, most importantly, safety risks. This is exactly where starter cultures come in.
What is a starter culture, in plain terms?
A starter culture is a selected, propagated mixture of live microorganisms added to a product to kick off fermentation in a controlled, predictable direction. In fermented meat production, this typically means:
- Lactic acid bacteria (such as Lactobacillus species) drive a fast, safe pH decline
- Cocci (such as Staphylococcus species) contribute to color development and aroma formation
These microorganisms aren't random additions — they're strains selected and tested against specific criteria.
The concrete benefits of using a starter culture
1. Food safety. The lactic acid bacteria in a starter culture rapidly acidify the environment, suppressing the growth of pathogens such as Listeria and Salmonella. In natural fermentation this process can be slow and unpredictable; with a starter culture, the pH decline is fast and controlled.
2. Standardization. Using the same starter culture combination across production batches ensures consistency in color, texture, and aroma — critical for brand reliability at industrial scale.
3. Shelf life and stability. Controlled fermentation improves the microbial stability of the product, extending its shelf life.
4. Characteristic aroma. The right strain combination reliably reproduces the traditional taste and aroma profile specific to a given product, batch after batch.
Why a "domestic and regional" starter culture?
The market has long relied on imported starter cultures. But these are typically optimized for European fermented meat traditions — salami, chorizo, and the like — and don't necessarily match the distinct aroma and texture expectations of Turkish sucuk or pastırma.
That mismatch was our starting point in developing BAKTOGARD®: strains isolated from Anatolia's own traditional fermented products. Under our KOSGEB-supported R&D project, working out of the İstanbul University Technology Development Zone, we developed starter culture combinations suited to the Turkish palate and tested them at industrial scale.
The result is a product family that reduces reliance on imports, is developed through domestic R&D, and preserves the authentic character of Turkish fermented meat tradition: the BAKTOGARD® Sucuk and Pastırma Series.
